Bad news first - that <p> tag isn't under your control, so you can't remove it. The only 'read mode' rendering of rich text that does not use the <p> tag is when the rich text field's 'web access display' property is set to HTML.
The good news is that this is a better rendering than we do if that property is set to either Java Applet or Best Fit for OS (IE's DHTML control if available) - they both get this <p> tag, and another <P> tag as well...
Thanks for the bug report, you've got me wondering why we need different renderings for read mode...
